Happy Wednesday, y’all! This week I’m sharing a recipe for Pumpkin Curry Chicken. Let me tell you, the picture does NOT do this meal justice. It’s soooo  yummy AND since you can cook it up in your slow cooker, it’s also soooo easy.

With Mr. Fit Armadillo spoiling me last week by being my cooking assistant, I needed something easy to make to ease back into the kitchen.  Since he’s gone, I also had to make something to try to lure him back home a little sooner.  I’m hoping that the curry powder I used will do the trick!  Today’s recipe has been modified from a very similar one I found here. I only made a few swaps to make it healthier for you 😉

Ingredients to Serve Pumpkin Curry Chicken to Four

1 6-oz can tomato paste
1 15-oz can pumpkin puree
1 15-oz can light coconut milk
1 c low sodium chicken broth
1 tbsp onion powder
1 tbsp garlic powder
2 tsp curry powder
1lb boneless, skinless chicken breasts
Optional:
Brown rice as a side
Cilantro for garnish

Even though my bunny loves cilantro and Mr. Fit Armadillo loves rice, I was feeling way too lazy to deal with any extra ingredients. However, if you’re making the meal for guests, I recommend you add both the cilantro and the brown rice to your shopping cart.

Here’s how to put it all together (spoiler alert: it’s easier than pumpkin pie!):

Step One: Gather up all of your required ingredients.

Step Two: Mix all ingredients besides your chicken breasts in your slow cooker.

Step Three: Place your chicken in your slow cooker and cover it with your pumpkin curry mix.  Set the slow cooker to low and cook for 4-6 hours or until the chicken is cooked completely.

That’s it! It’s so easy that I had to sort of add steps to make it look legit! It is really so delicious, too. I love using my slow cooker. Whenever I find a great meal like this I wonder why I don’t use it more often!
